Buddy Dive Resort is a dive resort on Bonaire, with 72 condos and a total of 220 beds. It has its own diving school, 2 restaurants, 1 bar and 2 pools and its own car rental on the premises. Currently we are looking for an enthusiastic and passionate:
Sous-Chef
As second-in-command you will be responsible for the planning and directing of the food preparation, supervising the kitchen employees and keeping the inventory control for both kitchens of our restaurants Blennies and Ingridients. This position requires a high skill level and long working hours.
DUTIES AND RESPONSIBILITIES
The sous-chef will supervise the food production, maintain the food cost standards, control food waste, schedule/assign work, set production goals or job expectations, train, coach or counsel coworkers, measure the performance and be responsible for other duties as necessary. Our sous-chef will report to the executive chef and also take over part of the chefs tasks in his/her absence.
KNOWLEDGE, SKILLS AND ABILITIES
We expect a thorough knowledge of ingredients, materials, methods and equipment used in preparing food on a large scale. Also considerable knowledge of food service management, methods and techniques; food values, nutrition and uses for leftover food.
Our candidate will be able to motivate his/her coworkers, plan and modify menus to meet various requirements, to control and manage retail food service operations and to take inventory and keep records of used food products.
He/she should have knowledge of health hazards in food preparation, service and of necessary precautionary measures and be able to supervise and train the work of others and to instruct subordinates in food service procedures. Furthermore the applicant is expected to be able to maintain a variety of records and to prepare reports.
We also require fluent Dutch and English both spoken and written; Spanish and Papiamentu are an advantage.
The ideal candidate will possess a culinary degree with four or more years of industry and culinary management experience in a similar position. Previous experience with control of food and labor cost, menu development and pricing and development of a culinary team are preferred. Have excellent references.
